No matter what, the Caribbean people have the knack of getting things right when it comes to their food. They succeed in creating excellent spicy dishes that can make anyone lick their fingers clean. However, in every cuisine, there is some dish or the other that is way better than the others. In my opinion, the best Jamaican recipe that I know of is Ackee and Saltfish.
Ackee and Saltfish is a dish that has become world-famous because of the Jamaican Diaspora. Restaurants in England and The United States serve this dish as their primary delicacy. And after all, why would the Jamaicans keep this dish in their staple diet for more than two centuries if it wasn’t excellent? It is something you can take a cue.
Ackee and Saltfish originated in the early 1700s when the people from the island of Newfoundland used to bring Salted Cod to Jamaica to trade it for rum. Salt Cod became one of the primary ingredients in Ackee and Saltfish.
If you’re wondering how you can make this dish at home, I have mentioned the ingredients and the procedure below. It is a bit complicated, but surely worth the effort.
Here is a list of the essential ingredients that you will require if you wish to make Ackee and Saltfish.
½ lbs of slated codfish dried.
12 fresh Ackees.
½ teaspoon of black pepper.
Three tablespoons of butter.
One sweet pepper.
One sliced tomato.
One sprig of fresh thyme.
½ of hot chilli pepper.
There are also some recommended ingredients that you may add to make your dish more delicious. They stated below.
Six slices of bacon.
Two cloves of garlic.
Method of Preparation:
Once you have put all the above-listed ingredients together, here is how you can go about the cooking process.
Cover Saltfish with cold water and put into a bowl.
Soak for eight hours. Keep changing the water.
Fill a pan with cold water and boil the fish in it till it becomes tender.
Chop the chilli pepper, sweet pepper, tomato and onions.
Remove the fish from the pan and wait until it cools.
Skin, de-bone and flake the flesh of the fish.
Melt some butter in a frying pan.
Fry the black pepper, chilli pepper, sweet pepper, thyme and onions.
After some time, add flaked fish and tomatoes and fry for approximately 10 minutes.
Add ackee and cook until completely hot.
Stir gently to prevent the ackee from breaking apart.
Serve your Ackee and Saltfish along with fried dumplings, Irish potatoes, yam and green banana.
